What do you look for in a restaurant when you walk in?
Something not too slick, family run, one person trying to pull off a miracle either very badly or with complete ease, somewhere in the middle of nowhere, one gas flame, simple food, it has to be alive (not the food) the feeling in the room etc
What is your final meal?
Turnip soup, panfried cheese and pickled fennel sandwich, icecream (probably change my mind tomorrow)

My favourite Japanese restaurant in the country, Ask Koki for the local eel if its in season, if you are lucky he will have some of my wild foraged mushrooms out the back - he will serve these on rice in a claypot - also if you are very lucky our aged chanterelle miso or rhino foot mushroom miso might be lying about, you can't go wrong on the menu.
Casual dinner: Pizza by Kit Lacuzi > currently at Bahama Gold, Brunswick East Melbourne
Order: When we hunting Vic Porcini - order the funghi pizza - otherwise Semi-dried Pizzutello tomatoes, stracciatella, pecorino, garlic, basil pizza
Wine: Wash down with Jauma Wines, 2023 Danby Grenache
