What do you look for in a restaurant when you walk in?
The lighting, the music and the style of the other diners (does this make me vain?).
What is your final meal?
A loaf of freshly baked bread, some French butter and salt.
3 guests for dinner, dead or alive?
Lewis Hamilton (Formula 1 Champion): He is my most admired athlete for sure. I would love to get his take on the 2021 World Championship controversy over dinner.
Dee Salmin (Host of The Hook Up podcast, my girlfriend): My incredible partner. She is the best company of anyone i’ve ever met, so is a welcome seat at the table.
Sam Harris (Neuroscientist, Author, Public Intellectual): I don’t agree with every view or opinion this guy has, but I love listening to his reasoning and his views nonetheless. The way he explains complex things is genuinely mind-blowing. His podcast is addictive, so I’d love to get in a wormhole with him.
Darcy’s Taste Maker Guide
Breakfast: Alimentari, Melbourne
Order: The Italian workers breakfast is the go to. A boiled egg, some prosciutto, olives and tomatoes with a side of sourdough. Chefs Kiss.
Coffee: Acoffee, Melbourne
Order: A long black or a batch brew.
Lunch: Stefanino Panino, Melbourne
Order: Sandwich number 10, the Cotoletta. Genuinely heavenly sanga of chicken schnitzel with tomato, lettuce and everything in perfect proportion. Gorgeous.
Special dinner: Embla, Melbourne
This restaurant is super moody, with beautiful lighting and a brilliant fit out. Has the charm of a venue that has been in place for years and years but is still refined. The chefs cook with an open fire which roars intermittently over the meal which makes the open kitchen great viewing and entertainment. A negroni or a martini kicks off the meal here perfectly. Order the chicken for a main protein, and thank me later. Also a double serving of the sourdough.
Casual dinner: Cams Kiosk
Order: The PASTA. Whatever it is, just get it. The Spaghetti Napoli will aways be on offer and is a great option, but pasta specials are always rotating, Just trust me, order it. Sitting in the middle of a convent, drinking a nice glass of wine and having a beautiful, casual meal is always a treat here. Breakfast, lunch or dinner. But my favourite is definitely a casual dinner.

Hope St Radio - Doesn’t miss. Come on a Saturday night for dinner and then some drinks in the courtyard. Very fun, very Melbourne.
Shark Finn Inn - Little Bourke St institution. Old world Chinese with incredible service. Get a lobster with some XO sauce on a special occasion. No notes.
Soi38 - Thai street food that is definitely worth the hype. Honestly order anything with noodles and your mouth will explode.
Marion - A beautiful Melbourne wine bar experience. The perfect mixture of special, refined but still casual enough. Order the flat bread and definitely the baked pasta.
